Baked Carrot "French Fries"

After looking high and low for a good recipe to replace traditional French fries with something healthier we sent our chefs to work in the kitchen. We are now introducing the baked carrot "French fry". While not fried at all, the healthy version of this popular potato side will delight the toughest critics and surprise the grownups sitting around the table.  A little sweet, and extremely delicious, these fries pack a bit of crispiness that everyone loves. Healthy, kid friendly, and tasty, the Swiss Diamond chefs have outdone themselves this time!

Ingredients

  • 2 lbs carrots
  • 1 tbsp. olive oil
  • 1 tsp. brown sugar (date sugar for vegan option)
  • salt and pepper to taste

Directions

  1. Preheat oven to 425 degrees.
  2. Peel using a Swiss Diamond Peeler and slice carrots using a Swiss Diamond Knife to look like your favorite French fries.  (about 1/2” x 1/2” x 3”).
  3. In a large mixing bowl, toss carrots with olive oil, brown sugar, salt and pepper.
  4. Arrange carrots in a single layer on a Swiss Diamond Double Burner Griddle or Grill or baking sheet.
  5. Bake for 10 minutes then flip all pieces. Continue to bake until fully cooked and slightly crispy, about an additional 10 minutes.
  6. Serve immediately with your favorite dipping sauce!
