Apple Cider Pulled Pork with Apple Slaw

Slow cooked for hours, this pulled pork sandwich is one that will have everyone bringing their plate back for seconds. A pork loin is cooked in a mixture of apple cider and spices until tender enough to pull apart. A homemade apple slaw is made to top off the sandwich and give it that extra tang. This apple cider pulled pork with apple slaw is a family favorite that can also be made in a low carb version by using a bowl instead of a bun.

INGREDIENTS

  • 2 lbs boneless pork loin or shoulder
  • ½ Tbsp olive oil
  • 1 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ Cup apple cider
  • 1/8 Cup apple cider vinegar
  • ½ onion, sliced into thin rings

For the Slaw:

  • 1 small head cabbage or ½ large head
  • 1 large or 2 small apples, peeled cored and julienne sliced
  • 2 scallions, sliced
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 1 tsp maple syrup
  • 1 tsp Dijon mustard

DIRECTIONS

  1. Pre-heat oven to 350°F
  2. In a small bowl mix the chili powder through smoked paprika and rub the mixture over the meat
  3. In a cast iron casserole, heat a ½ tablespoon olive oil over medium to high heat, once hot add the meat and brown on all sides
  4. Reduce heat, and add onion slices cook until they become translucent
  5. Place the meat on top of the onions, reduce heat and add the apple cider, apple cider vinegar, and water
  6. Cover and place in oven and cook for 2 - 3 hours
  7. While pork is cooking, place the shredded cabbage, apples and scallions into a bowl
  8. In a separate bowl, wisk together olive oil, vinegar and mustard and pour over cabbage
  9. Store in the refrigerator until the pork is ready to eat
