Apple Cider Pulled Pork with Apple Slaw

Slow cooked for hours, this pulled pork sandwich is one that will have everyone bringing their plate back for seconds. A pork loin is cooked in a mixture of apple cider and spices until tender enough to pull apart. A homemade apple slaw is made to top off the sandwich and give it that extra tang. This apple cider pulled pork with apple slaw is a family favorite that can also be made in a low carb version by using a bowl instead of a bun.

  • 2-pound boneless pork loin or shoulder
  • 1/2 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 cup apple cider
  • 1/8 cup apple cider vinegar
  • 1/2 onion sliced into thin rings

For the Slaw

  • 1 small head cabbage or 1/2 large head
  • 1 large or 2 small apples, peeled cored and julienne sliced
  • 2 scallions sliced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard


  1. Pre-heat oven to 350
  2. In a small bowl mix the chili powder through smoked paprika and rub the mixture over the meat
  3. In a cast iron casserole, heat a 1/2 tablespoon olive oil over medium to high heat, once hot add the meat and brown on all sides
  4. Reduce heat, and add onion slices cook until they become translucent
  5. Place the meat on top of the onions, reduce heat and add the apple cider, apple cider vinegar, and water
  6. Cover and place in oven and cook for 2 to 3 hours
  7. While pork is cooking place the shredded cabbage, apples and scallions into a bowl
  8. In a separate bowl whisk together the olive oil, vinegar, and mustard and pour over cabbage
  9. Store in the refrigerator until the pork is ready to eat
