Chai Apple Multigrain Pancakes

The pancakes are soft and bursting with flavor - an absolute home run!

Pancakes are found in almost every culture, which gives them amp room to be customized to liking. The general definition of a pancake is a thin flat cake made from batter and fried in a pan or on a griddle. In this dish, these soft pancakes are filled with a burst of flavor. The chai and apple gives the pancake a flavor that the whole household will love.

INGREDIENTS

  • ¾ Cup whole wheat flour
  • ¼ Cup cornmeal
  • ¼ Cup old fashioned oats
  • 2 Tbsp ground flax
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 Tbsp sweetened Chai spices
  • ¼ tsp ground cinnamon
  • 1 egg
  • 1 Tbsp brown sugar
  • 1¼ Cup unsweetened applesauce
  • ¾ Cup buttermilk
  • 2 Tbsp unsalted butter, melted

DIRECTIONS

  1. In a large bowl, wisk together the flour, cornmeal, oats, flax, baking soda, salt, Chai and cinnamon.
  2. In a separate bowl, wisk together the egg, brown sugar, applesauce, buttermilk and butter.
  3. Stir the wet ingredients into the dry ingredients and stir just until moistened.
  4. Pour 3 - 4 tablespoons of batter onto a hot, greased skillet.  Cook for 1 - 2 minutes or until browned, flip and cook on the other side. Serve hot with butter and a big dollop of whipped cream.
