  • • 1 bottle of amber beer
    • 1 package of active dry yeast
    • 2 tbs butter melted.
    • 2 tbs sugar
    • 1 tsp salt
    • 4 cups all-purpose flour
    • 10 cups of water
    • 2/3 cups of baking soda

    • 1 egg yolk (separate the egg!)
    • 1 tbs water
    • Coarse salt

    1. In a 7” XD nonstick pan heat the beer up to 110°F, remove from heat. Stir in the yeast until dissolved.
    2. In a large bowl, mix butter, sugar, salt, and the yeast/beer mixture, and 3 cups of flour. Beat on medium speed until it becomes a soft, sticky dough.
    3. Turn dough onto a floured surface and knead until elastic. Usually about 6-8 minutes. Place in a greased bowl (you can spray the bowl with cooking spray) cover with clean dish towel and let rise for 1 hour.
    4. Preheat oven to 425°F. Punch dough down and divide and shape into 8 balls. Roll each ball into a rope or “snake” then cut each rope into 1” pieces to create nuggets.
    5. Boil 10 cups of water and baking soda in an XD 5 qt pot. Drop 12 nuggets at a time and cook for 30 seconds. Remove with strainer or slotted spoon. Place on paper towels to drain.
    6. Place on 1-2 XD double burner griddles. Whisk together 1 egg yolk and tbs of water. Brush mixture over the pretzels and sprinkle with course salt. Bake 10-12 minutes until golden brown. Place on wire rack to cool.
