Prep Time:20 minutes , dough chills for 2 hours
Cook Time: 8 minutes
Yield: 48 servings (4 dozen cookies total)
Difficulty: Easy

  • 3¾ Cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 Cup margarine softened
  • 1 1/2 Cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract

Cinnamon Sugar Icing:

  • 2 Cup of powdered sugar
  • 1 tsp vanilla extract
  • 1/3 Cup milk
  • ¼ tsp ground cinnamon

  1. Sift flour, baking powder and salt. In a separate bowl, cream together margarine and sugar until fluffy. Beat in the eggs one at a time, stir in vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough and chill for two hours.
  2. Preheat oven to 400°F (200°C). Use a Swiss Diamond Double Burner Griddle or grease a cookie sheet. On a clean floured surface, roll out small, sectioned pieces of dough to ¼" thickness. Cut out shapes using cookie cutters.
  3. Bake 6 - 8 minutes in the preheated oven or until edges are slightly brown. Cool cookies on a wire rack.
  4. Stir together powdered sugar, milk, vanilla extract and cinnamon. Pour into bag to pipe or spoon onto cookies. This can get a little messy! Allow icing to dry before serving. You can also decorate with simple powdered sugar icing as seen in the photo!
