Cook Time: 8 minutes
Yield: 48 servings (4 dozen cookies total)
Difficulty: Easy

  • 3 3/4 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup margarine softened
  • 1 1/2 cups of white sugar
  • 2 eggs
  • 2 tsp vanilla extract

Cinnamon Sugar Icing

  • 2 cups of powdered sugar
  • 1 tsp vanilla extract
  • 1/3 cup milk
  • 1/4 tsp ground cinnamon

  1. Sift flour, baking powder, and salt. In a separate bowl cream together margarine and sugar until fluffy. Beat in the eggs one at a time, stir in vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for two hours.
  2. Preheat over to 400 degrees F (200 degrees C) use a swiss diamond double burner griddle or grease a cookie sheet. On a clean floured surface, roll out small, sectioned pieces of dough to ¼ inch thickness. Cut out shapes using cookie cutters.
  3. Bake 6 to 8 minutes in the preheated oven, or until edges are slightly brown. Cool cookies on a wire rack.
  4. Stir together powdered sugar, milk, vanilla extract, and cinnamon. Pour into bag to pipe, or spoon onto cookies. This can get a little messy! Allow icing to dry before serving. You can also decorate with simple powdered sugar icing as seen in the photo!
