These Classic Banana Pudding Parfaits are the modern cousins of an “Icebox” or “Refrigerator” cake. I remember my Father making something similar every summer. He’d assemble it, pop it in the fridge and take a nap with the intention of diving into his dessert when he woke up. (He had lofty goals for his Sunday afternoon!)
This no-bake dessert relies on vanilla wafer cookies, vanilla pudding, bananas, and whipped cream. This one goes together in a flash. The only heavy lifting you’ll do is making the pudding which is guaranteed to be much more impressive homemade than it is from a cardboard box.
If you hopped on the mini dessert trend that started a few years ago with desserts in shot-glasses, you’ll want to break those babies out of the cabinet and use them to assemble these cute parfaits. If you don’t have enough shot glasses or they’re not dessert-worthy, small canning jars or even recycled glass yogurt jars will do the trick!
