Classic Banana Pudding Parfaits

Pudding and wafers cookies are the building blocks of "icebox" or "refrigerator" cake. This recipe reinvents a classic as charming parfaits.

These Classic Banana Pudding Parfaits are the modern cousins of an “Icebox” or “Refrigerator” cake.  I remember my father making something similar every summer.  He’d assemble it, pop it in the fridge and take a nap with the intention of diving into his dessert when he woke up. (He had lofty goals for his Sunday afternoon!)

This no-bake dessert relies on vanilla wafer cookies, vanilla pudding, bananas and whipped cream.  This one goes together in a flash.  The only heavy lifting you’ll do is making the pudding which is guaranteed to be much more impressive homemade than it is from a cardboard box.

If you hopped on the mini dessert trend that started a few years ago with desserts in shot glasses, you’ll want to break those babies out of the cabinet and use them to assemble these cute parfaits. If you don’t have enough shot glasses or they’re not dessert-worthy, small canning jars or even recycled glass yogurt jars will do the trick!

INGREDIENTS

  • 4 large eggs, separated 
  • ½ Cup granulated sugar 
  • ½ Cup brown sugar 
  • 3 Tbsp all-purpose flour 
  • ½ tsp plus a pinch salt 
  • 1 Cup milk 
  • 1 Cup heavy cream
  • 1/2 tsp vanilla extract 
  • 30 Vanilla Wafers
  • whipped cream, sliced bananas and additional Vanilla Wafers for garnish

DIRECTIONS

  1. Take 3 eggs and separate the whites from the yolks.  Place them into a bowl and add one whole egg.
  2. Into a large Swiss Diamond Oval Casserole over medium heat, combine granulated sugar, brown sugar, flour and salt. Stir in egg mixture, milk and heavy cream.
  3. Cook uncovered for 5 minutes, stirring often until thickened.  
  4. Remove from heat and add vanilla.
  5. Allow the mixture to cool slightly before assembling parfaits.
  6. In a large Ziploc bag, crush Vanilla Wafers.
  7. Place 2 tablespoons of wafers into the bottom of a parfait glass or small jar.
  8. Top with 2 tablespoons of pudding, followed by 2 more tablespoons of wafers and ending with 2 more tablespoons of banana pudding.
  9. Top each glass with a Vanilla Wafer, slice of banana and a dollop of whipped cream.
