Easy Peanut Butter Cornflake Bars

Sometimes the best desserts are the simple homemade ones that remind you of your childhood. You probably have everything you need for these four-ingredient cereal bars in your pantry right now.

Let’s face it, pre-packaged snack bars can be crazy expensive and contain ingredients only a chemist can pronounce.  It only takes 12 minutes and a few pantry staples to make these Easy Peanut Butter Cornflake Bars from scratch. Why not give them a try tonight?  

These treats will bring all ages to the kitchen to “help” so be prepared. Use the time to reconnect with family. Let the kids measure ingredients while they tell you what happened in school today.  Before you know it, you’ll have a perfect treat to add to their lunchboxes tomorrow and the low-down on that list of household items they need for their science project.

Keeping things simple is perfectly ok and frees up time to focus on what’s truly important.  Your kid's snack bar won’t feature the latest cartoon character on the wrapper but the time you spend with them in the kitchen will be remembered by all for years to come. Enjoy!

INGREDIENTS

  • 1 Cup Sugar
  • 1 Cup Light Corn Syrup
  • 1 Cup Creamy Natural Peanut Butter
  • 6 Cups Cornflakes

DIRECTIONS

  1. In a large Swiss Diamond XD Nonstick Stock Pot combine the sugar and corn syrup.
  2. Over medium-high heat bring to a boil, stirring often.
  3. Stir in Peanut Butter until well combined.
  4. Remove from the heat.
  5. Stir in Cornflakes, mixing well.
  6. Press into a greased 7" × 11" baking pan.
  7. Let cool and cut into bars.

Note:
I always spray my measuring cups with cooking spray to measure the corn syrup and the peanut butter.  It helps everything come out more easily.
