Description

This spinach pesto is a great alternative to storebought pesto! You can use it on so many different things, and it's very simple to make! We love to put this over our pastas, even lentil based ones! You can use this pesto in many different recipes we've posted. Enjoy!

INGREDIENTS

  • 2 Cup baby spinach leaves
  • ¼ Cup fresh basil leaves (or 1 Tbsp dried basil)
  • ¼ Cup fresh parsley
  • ½ Cup chopped walnuts or pine nuts (optional)
  • 3 garlic cloves
  • 1 Tbsp fresh lemon juice
  • salt and fresh ground pepper to taste
  • 1/3 Cup extra virgin olive oil (use more or less for desired consistency)

DIRECTIONS

  1. Put all ingredients in a food processor or blender and blend to form a sauce! (usually around 30 seconds)
  2. Enjoy on pasta, chicken, pork chops and more!
