Fried Rice Using Leftovers

Fried rice is one of the most popular dishes in Chinese restaurants across America. But did you know you can make restaurant quality fried rice from the comfort of your own kitchen? This recipe is perfect because it’s super quick to prepare and reduces the amount of food waste in your kitchen! Gather up leftover chicken, celery and peas for a tasty dish the whole family will love.

INGREDIENTS

  • Cooked rice
  • Cooked roast chicken breast, diced
  • Speck, bacon or Lap Cheong (Chinese sausage)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Dark soy sauce (Kecap Manis)
  • 4 Eggs
  • Extra Virgin Olive Oil
  • Onion, diced
  • Garlic, diced
  • Spring onion (green onion), chopped
  • Celery, diced
  • Coriander
  • 1 long red chili, chopped
  • ½ tsp Curry Powder
  • 1 Cup peas
  • Deep fried shallots

DIRECTIONS

  1. In a bowl, wisk together the eggs and soy sauces.
  2. Drizzle 1 Tbsp extra virgin olive oil into a small Swiss Diamond Nonstick Fry Pan over medium heat, then pour in the eggs. Stir to cook on all sides and ensure it does not stick. Once set, remove from pan and cut into thin strips.
  3. Heat a large Swiss Diamond Nonstick Fry Pan over medium heat, drizzle in 1 Tbsp extra virgin olive oil and add the onion, garlic and ginger. Stir through the speck/Lap Cheong/bacon and celery, allowing the fat to render down for 1-2 minutes.
  4. Add the chili, chicken, curry powder, salt and pepper, and toss to combine. Add the rice and a little extra soy sauce if desired. Stir through and allow to cook for 2 - 3 minutes.
  5. Stir through the peas, Kecap Manis (dark soy sauce), spring onion, coriander and toss. Turn off the heat and finally stir through the cooked egg. Garnish with deep-fried shallots before serving.
