Herby Ginger Apple Compote

Pork topped with nice, bite-sized apples balances, sweet and savory, without going overboard.

The sweet and savory meal we have all been waiting for is here. In this recipe, pork is topped with bite-sized apples which enhances the flavor between the two. In order to get the perfect sweet and savory flavoring, you have to be sure to not cook the pork for too long. The sweetness of the apples will balance out the savory components of the pork. It is important to cut the apples in small enough to where you can get a mouth full with every piece of pork. Pork dates back to 5000 B.C. so you will have plenty of time to make this recipe!

  • 1 tsp butter
  • 1 apple, peeled and diced
  • 1 slice onion, diced (about 2 tablespoons)
  • 1 clove garlic, minced
  • 1 tsp fresh ginger
  • 1 tsp soy sauce
  • Freshly ground black pepper to taste
  • ¼ Cup apple juice
  • 1 tsp fresh basil, minced
  • 1 tsp fresh thyme, minced
  • 1 tsp fresh rosemary, minced


  1. Melt the butter in a sauté pan over medium heat.  Add the apples and onions and cook, stirring frequently until they begin to caramelize.  Add the garlic and cook until fragrant.
  2. Reduce heat to medium-low.  Stir in the remaining ingredients and simmer until flavors are melded and sauce is thickened.
