Honey-Maple Roasted Baby Carrots

With just a few simple ingredients you already have in your kitchen, you can turn a very ordinary vegetable into a stunningly flavorful side dish! Plus, it’s perfect for almost any holiday occasion, not just Easter!

If you don’t have many side dish ideas this Easter, consider adding these little guys to your menu! We’ll admit, we’re not crazy about carrots.  Baby carrots are typically eaten with ranch or not eaten at all. But with just a few simple ingredients you already have in your kitchen, you can turn a very ordinary vegetable into a stunningly flavorful side dish!

Cook Time: 30 minutes
Yield: 4-5 servings

INGREDIENTS

  • 2 lbs baby carrots
  • 5 Tbsp butter
  • 5 Tbsp honey
  • 3 Tbsp maple syrup
  • 3 Tbsp brown sugar
  • ¼ tsp cinnamon
  • ½ tsp smoked paprika
  • 1½ tsp kosher salt
  • 2 sprigs thyme, for garnish

DIRECTIONS

  1. Preheat oven to 400°F
  2. In a Swiss Diamond Nonstick Sauté Pan, melt butter over low-medium heat
  3. Add honey, maple syrup and brown sugar, continue to stir until sugar is dissolved
  4. Stir in cinnamon, salt and smoked paprika. Remove from heat
  5. Place carrots in a Swiss Diamond Nonstick Roaster and drizzle the honey mixture over the carrots and mix until carrots are fully coated
  6. Bake for 25 - 30 minutes or until carrots are tender
  7. Serve immediately and garnish with fresh sprigs of thyme
  8. Enjoy!
