One-Pot Jamaican Jerk Chicken

One-pot dishes have become popular because they are tasty and easy to cook. In this internationally inspired dish, Jamaican jerk chicken is cooked on top of diced plantains, sweet potatoes and apples. The key to this recipe is to dice your vegetables and fruits and toss them with olive oil, salt and pepper, and the rest will be a breeze.

INGREDIENTS

  • 2 lbs chicken breasts cut into 6 servings
  • 2 Tbsp Jamaican Jerk seasoning
  • 1 sweet potato, diced
  • 3 plantains, diced
  • 2 apples, diced
  • 1 red onion, diced
  • 2 garlic cloves minced
  • 2 Tbsp extra virgin olive oil
  •  tsp kosher salt
  • ½ tsp pepper

DIRECTIONS

  1. Preheat oven to 450°F.
  2. Place diced sweet potatoes, plantains, apples, onion and garlic in dutch oven.  Drizzle olive oil over the mixture.  Season with salt and pepper and toss to coat.
  3. Season each chicken breast with ½ tsp of Jamaican Jerk seasoning on each side.  Place chicken in dutch oven over the vegetable mix.
  4. Bake chicken and veggies for 30 - 35 minutes until chicken is cooked through and sweet potatoes are tender.
