Shaved Apple Salad

Who said a salad just had to be lettuce and vegetables? In this unique dish, a shaved apple salad is made consuming fennel, pepitas, walnuts and kale. The apples give the salad a taste of fall and the light cider mustard vinegarette dressing says goodbye to summer. This recipe is ideal for a light lunch that will fill you up until dinner.
