Spring Fruit and Rice Cereal Treat Kabobs

Rice Cereal Treats are sweet but not too terribly decadent. When you pair them with healthy, brightly colored fruit they're pretty much guilt-free!

Some of the best desserts are the things you remember from your childhood.  Those simple things your mom made that came together quickly from a few ingredients and were as fun to make as they were to eat.  These Spring Fruit and Rice Cereal Treat Kabobs are a lot like that.

Back in the ’70s and '80s, cereal treats weren’t typically paired with fruit but we’re a bit older and wiser now when it comes to nutritious snacks. This recipe takes those sweet cereal treats you remember, portions them perfectly and pairs them with a serving of fruit.

The presentation is as kid-friendly as it gets – ideal for any spring celebration.  Give these a try for your next family get-together.  Both the kids and adults will be happy you did.

INGREDIENTS

  • 3 Tbsp Butter or Margarine
  • 1 Package (10 oz., or about 40) Marshmallows or 4 Cups Miniature Marshmallows
  • 6 Cups Crispy Rice Cereal
  • Wooden Skewers
  • Fresh fruits such as Raspberries, Kiwi Slices, Orange Wedges, Grapes, Pineapple Chunks, Watermelon, Strawberries, etc.

DIRECTIONS

  • Butter a 13" x 9" pan, set aside.
  • Melt margarine in Swiss Diamond Cast Iron Round Casserole or large Dutch oven over low heat. Add marshmallows and stir until completely melted.
  • Stir in cereal until well coated.
  • Using a lightly buttered spatula, press into buttered pan and let cool for at least an hour before cutting into shapes or small squares.
  • While the treats are cooling, cut the fruit into shapes.
  • Alternating with fruit, thread the cereal treats onto the wooden skewers.
  • Serve room temperature.
