The Beast Steak Burger

Spring is in full swing, and grilling is on everyone’s mind. Burgers are a staple when it comes to grilling indoors or out.  They’re great for a dinner for two or hosting the entire neighborhood over for a party.  There are as many recipes for hamburgers as there people who enjoy them. Our friends over at TastyEducation.com have put together “The Beast Steak Burger” recipe for everyone to enjoy. Chef Keith Snow shows you how to start by grinding your own chuck and short ribs, then mixing in some fresh bold but not overpowering herbs.  If you want to watch Chef Keith Snow prepare this dish, here’s a video.


Prep Time: 20 Minutes
Cook Time: 10 Minutes
Yield: 8 burgers
Difficulty: Easy

INGREDIENTS

  • 2 lbs chuck
  • 2.5 lbs short ribs (weight before de-boning)
  • 2 oz shallots
  • 5 Tbsp parsley, minced
  • 2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 Tbsp grapeseed oil

DIRECTIONS

  1. Grind chuck and short ribs into a mince, set aside.
  2. Heat Swiss Diamond Saute Pan or Grill Pan over medium high heat, add 1 tbsp oil and shallots, saute 5 minutes. Turn off heat, add parsley, remove from pan and allow to cool.
  3. Mix cooled shallot/parsley mixture to beef, add black pepper, smoked paprika and salt. Form into large balls, then into patties.
  4. Cook over grill or grill pan, serve on a plate with your favorite steak sauce.
