Butter Roasted Sweet Potatoes

Description

YUM! These sweet potatoes get a crispy texture after you cook them in the oven on one of our Double Burner Griddle. For a healthier option, swap the butter out for coconut oil! You can also make these potatoes more unique by using a little paprika or smokey salt. 

INGREDIENTS

  • 2 pounds sweet potatoes (about 2 large)
  • 4 tablespoons unsalted butter, ghee, or coconut oil, melted and cooled
  • 1/2 teaspoon kosher salt

DIRECTIONS

    1. Place an oven rack in the middle of the oven and heat to 425°F. We suggest peeling the sweet potatoes, but this is optional. Cut them crosswise into 1-inch thick rounds.

    2. Place the rounds on the XD Nonstick Double Burner Griddle Sheet. Drizzle with butter or fat of your choice (like coconut oil.) sprinkle with salt and toss to coat. Arrange in a flat single layer making sure each round has room.

    3. Bake for 20 minutes. Use plastic tongs or spatula to flip the rounds over. Bake for another 20 minutes.
    4. Enjoy!
