Indoor Burgers with Avocado Mayonnaise

In our neck of the woods, it is currently mid-winter, which means there is not a great time to be outside grilling. That does not mean we need to sacrifice burgers though! This recipe is tried and true and features a delicious homemade avocado mayonnaise that can be used in many different dishes! Often this style of cooking burgers is called “diner style” because its cooked on a griddle or cast iron. INGREDIENTS

  • 1½ lbs. ground chuck (not too lean)
  • Lettuce (optional topping)
  • Tomato (optional topping)
  • 2 Tbsp unsalted butter
  • 8 Slices of Pepper Jack cheese
  • 8 Burger buns
  • Salt and Pepper to taste
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder

Avocado Mayo:

  • 1 large avocado, ripened
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1 small garlic clove, minced or 2 tsp garlic powder
  • ¼ tsp salt
  • 2 Tbsp water

DIRECTIONS

  1. Prepare Avocado Mayonnaise by pitting and scraping out avocado and adding it to a bowl with all other ingredients. 
  2. Blend with immersion blender or small food processor. Can be stored for up to 3 days. 
  3. Place double burner on stove on medium-high heat. Mix 1½ lbs. of ground chuck in a bowl with salt, pepper, Italian seasoning and garlic. Separate out onto double burner into 6 - 8 loosely shaped patties, allowing space in between. 
  4. Press down slightly on each patty with a plastic or wooden spatula. Season with salt and pepper if desired.
  5. Cook patties on each side, about 2 - 3 mins each. Lay cheese onto patties to slightly melt. 
  6. Cook until meat is cooked through, then remove from griddle. Turn down heat to low-medium and place buns on skillet to slightly crisp.
