Thai-inspired Stir Fry

INGREDIENTS

  • 1 1/2 pounds skirt steak, cut against the grain into 1/4-inch-thick slices
  • 2 cloves garlic, grated
  • 1 bunch scallions, thinly sliced
  • 1 tablespoon of fish sauce
  • 1/4 cup low-sodium soy sauce
  • 2 teaspoons chopped fresh ginger root, divided
  • 1 Thai chili pepper, seeded and finely chopped
  • 2 teaspoons sugar
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 6 ounces fresh mushrooms, sliced
  • 1/4 pound of broccoli or other vegetables of your choice
  • Salt and freshly ground pepper to taste

DIRECTIONS

  1. In a medium bowl, combine the soy sauce, fish sauce, Thai chili pepper, sugar, ginger and lime juice and whisk together. Add the steak, toss to coat and set aside.
  2. Heat 1 teaspoon of oil in a large frying pan or wok over medium heat and heat until shimmering.
  3. Add both the steak and marinade to the frying pan and cook while continuously stirring, until the steak is cooked through, roughly 4 or 5 minutes.
  4. Remove the steak from the frying pan and set aside. Allow the liquid in the pan to reduce until it starts to thicken, approximately 3 or 4 minutes.
  5. Add the garlic and scallions and allow them to cook for roughly 2 minutes before adding the mushrooms, broccoli, and other remaining vegetables.
  6. Continue to cook until for approximately 4 minutes or until the vegetables are tender.
  7. Return the steak to the frying pan and toss to combine.
