Thai-Inspired Stir-Fry

INGREDIENTS

  • 1½ lbs skirt steak - cut against the grain into 1/4" thick slices
  • 2 cloves garlic, grated
  • 1 bunch scallions, thinly sliced
  • 1 Tbsp of fish sauce
  • ¼ Cup low-sodium soy sauce
  • 2 tsp chopped fresh ginger root, divided
  • 1 Thai chili pepper, seeded and finely chopped
  • 2 tsp sugar
  • 2 Tbsp freshly squeezed lime juice
  • 2 Tbsp olive oil
  • 6 oz fresh mushrooms, sliced
  • ¼ lb of broccoli or other vegetables of your choice
  • Salt and freshly ground pepper to taste

DIRECTIONS

  1. In a medium bowl, combine the soy sauce, fish sauce, Thai chili pepper, sugar, ginger and lime juice and wisk together. Add the steak, toss to coat and set aside.
  2. Heat 1 tsp of oil in a large frying pan or wok over medium heat until shimmering.
  3. Add both the steak and marinade to the frying pan stirring continuously until steak is cooked through, roughly 4 - 5 minutes.
  4. Remove the steak from the frying pan and set aside. Allow the liquid in the pan to reduce and starts to thicken, approximately 3 - 4 minutes.
  5. Add the garlic and scallions and allow them to cook for roughly 2 minutes before adding the mushrooms, broccoli and other remaining vegetables.
  6. Continue to cook for approximately 4 minutes or until vegetables are tender.
  7. Return the steak to the frying pan and toss to combine.
