Apple Cider Pancakes
Sometimes mistakes make the best recipes. In this fall favorite, apple cider made that happen. When thinking of pancakes, we typically think of the original, blueberry or chocolate chip but this recipe put a spin on them all. In these apple cider pancakes, with every bite you will taste real apples and apple cider. This recipe is also kid-friendly so the whole family will enjoy.

INGREDIENTS
- 3 Cup flour
- ¼ Cup brown sugar, packed
- 1Tbsp baking powder
- ½ tsp salt
- 1 tsp apple pie spice
- 2½ Cup apple cider
- 3 large eggs
- 6 Tbsp butter, melted
- 1 tsp vanilla paste
DIRECTIONS
- In a large bowl, wisk together flour, sugar, baking powder, salt and apple pie spice.
- In a separate bowl, wisk together cider, eggs, melted butter and vanilla paste.
- Pour the cider mixture over the flour mixture and wisk only until everything is combined.
- Lightly grease a Swiss Diamond Double Burner Griddle with butter. Spoon ¼ cup of batter for each pancake. When bubbles form around the edge and on top, flip the pancakes. Cook until bottoms are light brown.
- Pancakes can be kept warm in a 200°F - 250°F oven.
