Overnight Apple Pie Steel Cut Oatmeal

Overnight Apple Pie Steel Cut Oats are a hearty and filling breakfast, perfect to keep you going all morning long. Imagine cooking your breakfast overnight and it is ready by morning. In this overnight apple pie steel cut oat recipe, in just a few minutes you will have a filling breakfast that will have you going all day. Steel cut oats are coarsely chopped and contain a lower glycemic index. The glycemic index predicts how much a person's blood sugar will spike after eating a certain meal so this recipe is also a good match for a diabetic or someone who would like to watch their sugar intake.

INGREDIENTS

1 Cup steel cut oats

3 Cup water

1 Cup milk (regular, soy, or almond)

2 tsp cinnamon

1 tsp vanilla

1, 16 oz can apple pie filling (we use sugar-free)

Chop apples to bite-sized pieces

2 Tbsp any sweetener of your choice; Sugar, sugar substitute that measures like sugar, honey, maple syrup or if your sweetener measures differently than sugar, use to taste 1 Tbsp for each serving

Optional toppings: chopped walnuts or pecans, cinnamon chips, dried cranberries

DIRECTIONS

  1. In a medium pot, add steel cut oats and water.
  2. Bring to a boil and let simmer for 2 minutes.
  3. Remove from heat and cover with a lid and let sit overnight.
  4. In the morning, add milk, your choice of sweetener and cinnamon.
  5. Stir to combine.
  6. Cook over medium heat for 5 - 10 min, stirring occasionally until warmed through and thickened to desired consistency.
  7. Stir in apple pie filling.
  8. Remove from heat.
  9. Pour into serving bowls and top with your choice of topping.
