Bananas Foster Pancakes
There's nothing more impressive than a flame in a pan when cooking, assuming it's intentional and controlled, of course. This breakfast will impress everyone you're cooking for. We tend to keep this recipe for brunch with friends, but your kids will love it just the same. These Bananas Foster Pancakes are easy to make, sweet and so delicious! They feature fluffy pancakes and a topping so sweet and decadent that you'll never want regular ole' syrup ever again. The great thing about this recipe is you can use it not only for breakfast but for dessert as well. We did make our pancake mix but store-bought is just fine here. After all, the pancake is not the star!
INGREDIENTS
For the Pancakes:
- 1 ½ Cup all-purpose flour
- 3½ tsp baking powder
- ¼ tsp salt or more to taste
- 1 Tbsp white sugar
- 1¼ Cup milk
- 1 egg
- 3 Tbsp unsalted butter, melted
For the topping:
- ¼ Cup unsalted butter
- ⅔ Cup dark brown sugar
- 3½ Tbsp rum
- 1½ tsp vanilla extract
- ½ tsp ground cinnamon
- 3 bananas, peeled and sliced lengthwise and crosswise
- ¼ Cup walnuts, chopped coarsely
DIRECTIONS
For the Pancakes:
- In a large bowl, sift together the flour, baking powder, salt and sugar.
- Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly buttered Swiss Diamond griddle or a Swiss Diamond frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Brown on both sides and serve hot.
For the Topping:
- Melt butter in a large Swiss Diamond skillet over medium heat. Stir in brown sugar and cinnamon. Bring to a low boil.
- Once the sauce mixture is dissolved together, cook until bananas have softened, 1 - 2 minutes.
- Mix rum and vanilla and add to the pan and light the rum on fire.
- Once the flame goes out, the alcohol is burned off and ready to serve on top of the pancakes. Top with walnuts and eat hot. If pancakes aren't your thing, this is delicious served over vanilla ice cream.
