INGREDIENTS

  • 1 bottle of amber beer
  • 1 pkg active dry yeast
  • 2 Tbsp butter, melted
  • 2 Tbsp sugar
  • 1 tsp salt
  • 4 Cup all-purpose flour
  • 10 Cup water
  • 2/3 Cup baking soda

Topping:

  • 1 egg yolk
  • 1 Tbsp water
  • Coarse salt

DIRECTIONS

  1. In a 7” XD nonstick pan heat the beer up to 110°F, remove from heat. Stir in the yeast until dissolved.
  2. In a large bowl, mix butter, sugar, salt, yeast/beer mixture and flour. Beat on medium speed until it becomes a soft, sticky dough.
  3. Turn dough onto a floured surface and knead until elastic. Usually about 6 - 8 minutes. Place in a greased bowl (you can spray the bowl with cooking spray), cover with clean dish towel and let rise for 1 hour.
  4. Preheat oven to 425°F. Punch dough down and divide and shape into 8 balls. Roll each ball into a rope or “snake” then cut each rope into 1” pieces to create nuggets.
  5. Boil 10 cups of water and baking soda in an XD 5 qt pot. Drop 12 nuggets at a time and cook for 30 seconds. Remove with strainer or slotted spoon. Place on paper towels to drain.
  6. Place on 1 - 2 XD double burner griddles. Wisk together 1 egg yolk with a tablespoon of water. Brush mixture over the pretzels and sprinkle with course salt. Bake 10 - 12 minutes until golden brown. Place on wire rack to cool.
