Blackened Tilapia

This blackened tilapia is crusted with a delicious combination of herbs and spices. Serve with roasted red potatoes or asparagus for a healthy dinner option! 

INGREDIENTS

  • 2 Tbsp packed brown sugar
  • 4 tsp ground cumin
  • 2 tsp kosher salt
  • 2 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 4, 6 oz tilapia filets
  • 2 Tbsp extra-virgin olive oil

DIRECTIONS

  1. Combine the brown sugar and other seasonings in a small bowl. Rub this mix all over the filets.
  2. In a 12.5” XD Nonstick Frypan, heat oil on medium. Add tilapia and cook until crust is a deep golden color, about 2 - 3 minutes
  3. In another bowl, toss the avocado, tomato, jalapeno and cilantro to create a salsa. Add oil and lime juice. Season with salt and pepper to taste.
  4. Serve this avocado salsa atop your tilapia!
