Caprese Zoodles

These zucchini noodles are a healthy alternative to regular pasta! We love this take on a classic Italian flavor and we know you will too! For extra flavor, use fresh mozzarella!

INGREDIENTS

4 large zucchini

2 Tbsp extra-virgin olive oil

kosher salt

Freshly ground black pepper

2 Cup cherry tomatoes, halved

1 Cup mozzarella balls, quartered if large

1/4 Cup fresh basil leaves

2 Tbsp balsamic vinegar

DIRECTIONS

  1. Use a spiralizer to create your zucchini noodles. You simply twist the zucchini into the spiralizer to do this.
  2. If you need help, try looking up a YouTube video for your brand of spiralizer.
  3. Add your zoodles to a medium or large bowl.
  4. Toss them with olive oil, salt, pepper and Italian seasoning.
  5. Let them sit for about 15 minutes.
  6. Add halved cherry tomatoes, mozzarella and basil to the zoodles.
  7. Toss until it is all combined.
  8. Drizzle with balsamic (our favorite part) and serve!
