Caprese Zoodles
These zucchini noodles are a healthy alternative to regular pasta! We love this take on a classic Italian flavor and we know you will too! For extra flavor, use fresh mozzarella!
INGREDIENTS
4 large zucchini
2 Tbsp extra-virgin olive oil
kosher salt
Freshly ground black pepper
2 Cup cherry tomatoes, halved
1 Cup mozzarella balls, quartered if large
1/4 Cup fresh basil leaves
2 Tbsp balsamic vinegar
DIRECTIONS
- Use a spiralizer to create your zucchini noodles. You simply twist the zucchini into the spiralizer to do this.
- If you need help, try looking up a YouTube video for your brand of spiralizer.
- Add your zoodles to a medium or large bowl.
- Toss them with olive oil, salt, pepper and Italian seasoning.
- Let them sit for about 15 minutes.
- Add halved cherry tomatoes, mozzarella and basil to the zoodles.
- Toss until it is all combined.
- Drizzle with balsamic (our favorite part) and serve!
