Cinnamon Sugar Iced Holiday Cookies

INGREDIENTS 3¾ Cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 Cup margarine softened
1 1/2 Cup white sugar
2 eggs
2 tsp vanilla extract
Cinnamon Sugar Icing:
2 Cup of powdered sugar
1 tsp vanilla extract
1/3 Cup milk
¼ tsp ground cinnamon
DIRECTIONS
- Sift flour, baking powder and salt.
- In a separate bowl, cream together margarine and sugar until fluffy.
- Beat in the eggs one at a time, stir in vanilla.
- Gradually blend in the sifted ingredients until fully absorbed.
- Cover dough and chill for two hours.
- Preheat oven to 400°F (200°C).
- Use a Swiss Diamond Double Burner Griddle or grease a cookie sheet.
- On a clean floured surface, roll out small, sectioned pieces of dough to ¼" thickness.
- Cut out shapes using cookie cutters.
- Bake 6 - 8 minutes in the preheated oven or until edges are slightly brown.
- Cool cookies on a wire rack.
- Stir together powdered sugar, milk, vanilla extract and cinnamon.
- Pour into bag to pipe or spoon onto cookies. This can get a little messy!
- Allow icing to dry before serving.Â
