Hanukkah Noodle Kugel

Swiss Diamond invites you to try this dish in celebration of Hanukkah! Did you know foods fried in oil are popular during Hanukkah because it symbolizes the oil that burned for eight straight nights? This dish is traditionally made with egg noodles, but if you aren't a fan you're welcome to substitute in any medium-sized pasta, like penne. We love this comfort food dish, and we know your family will too. This recipe comes from Makinze G. via Delish.com

Yield: 6-8 servings

INGREDIENTS

16 oz wide egg noodles

5 large eggs

1/2 Cup of butter, melted

16 oz sour cream

8 oz cottage cheese

3/4 Cup of sugar

1/2 tsp of cinnamon

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Grease a 9" x 13" baking dish.
  3. In a large pot of boiling water (we use the 8.5 qt nonstick stock pot), cook pasta until al dente, usually for 5 minutes.
  4. Drain.
  5. In a large bowl, mix together eggs, butter, sour cream, cottage cheese, sugar and cinnamon.
  6. After mixing, stir in the noodles.
  7. Pour into prepared dish and bake until set, usually around 1 hour.
  8. Keep an eye on it, and if the top begins to get too dark, you can cover it with aluminum foil.
  9. Remove from oven and serve! Happy Hanukkah!
