1½ lbs. ground chuck (not too lean)
Lettuce (optional topping)
Tomato (optional topping)
2 Tbsp unsalted butter
8 Slices of Pepper Jack cheese
8 Burger buns
Salt and Pepper to taste
2 tsp Italian seasoning
1 tsp garlic powder
Avocado Mayo:
1 large avocado,
ripened
2 Tbsp olive oil
1 Tbsp lemon juice
1 Tbsp Dijon mustard
1 small garlic clove, minced or 2 tsp garlic powder
¼ tsp salt
2 Tbsp water
DIRECTIONS
Prepare Avocado Mayonnaise by pitting and scraping out avocado and adding it to a bowl with all other ingredients. Blend with immersion blender or small food processor. Can be stored for up to 3 days. Place double burner on stove on medium-high heat. Mix 1½ lbs. of ground chuck in a bowl with salt, pepper, Italian seasoning and garlic. Separate out onto double burner into 6 - 8 loosely shaped patties, allowing space in between. Press down slightly on each patty with a plastic or wooden spatula. Season with salt and pepper if desired. Cook patties on each side, about 2 - 3 mins each. Lay cheese onto patties to slightly melt. Cook until meat is cooked through, then remove from griddle. Turn down heat to low-medium and place buns on skillet to slightly crisp.
