One-Pan Pork Chops with Apples and Cinnamon

INGREDIENTS
- 2 Tbsp unsalted butter
- 1 small onion, coarsely chopped
- 2 apples, cut into large chunks
- ½ tsp cinnamon
- 4 thick (1½") bone-in pork chops
- ½ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp cinnamon
- 6 oz apple cider
DIRECTIONS
- In a large, 6.3 qt shallow casserole pan over medium heat, melt 1 Tbsp of butter. Add in onions and saute for 5 minutes. Add in apples and cinnamon and cook for 3 minutes. Remove apples and onions from pan and set aside onto a plate.
- Add remaining butter to skillet. When melted, add in rosemary. Season pork chops with salt and pepper and add to pan. Cook 5 minutes each side. Remove pork from pan and place onto a plate.
- Add onion and apple mixture to pan and pour in apple cider. Scrape up the brown bits on the bottom of the pan and nestle the pork chops in. Place the lid on and cook 10 - 12 minutes until cooked through.
