Out-of-This-World Apple Cake

I found this recipe in my mom's collection, but she notes that it came from Mrs. Wilkes Boarding House in Savannah, GA. It seems appropriate that I call it Out-of-This-World Apple Cake because it's really that delicious. This recipe has been passed down for generations with the original handwritten version still available. 

Prep Time:15 minutes

Cook Time: 50 minutes

Yield: 10 servings

Difficulty: Medium

INGREDIENTS

1½ Cup canola oil

2 Cups sugar

3 large eggs

3 Cups flour, sifted

1 tsp baking soda

1 tsp vanilla extract

3 Cup apple, finely chopped

1 tsp salt

3/4 tsp apple pie spice

1 Cup nuts, walnuts or pecans, chopped

DIRECTIONS

  1. Preheat oven to 375°F
  2. Grease and flour a 12-cup Bundt pan, set aside.
  3. In a mixing bowl sift together flour, baking soda, salt and apple pie spice.
  4. In separate bowl, cream oil and sugar and then add eggs, one at a time, beating well after each addition.
  5. Add flour mixture all at one time as well as vanilla extract.
  6. Gently fold in chopped apple and chopped nuts.
  7. Bake in prepared pan for 50 - 60 minutes or until a toothpick comes out with moist crumbs.
  8. Cool in pan 15 minutes then remove and place on cooling rack.
