
Spice-Rubbed Bison Tenderloin
Bison, also known as buffalo, is a great source of lean grass-fed meat. The tenderloin is the most sought-after cut of meat on the bison (as well as most other red meats) and cooks well on moderately high heat to ensure it stays juicy and tender. The health benefits of bison generally include it being an antibiotic-free meat that is also a good anti-inflammatory.

Ingredients
- 1 whole chipotle chile in adobo, seeded (or 1 tsp ground dried chipotles)
- ½ tsp freshly ground black pepper
- 1 tsp ground cumin
- 1 tsp ground allspice
- 1 tsp dark brown sugar
- ½ tsp salt
- ½ tsp dried oregano
- ¼ tsp garlic powder
- ¼ tsp celery seed
- 1 tbsp fresh lime juice
- 32 oz bison tenderloin (cut into 8 oz portions)
Directions
- Combine the first 10 ingredients in a mixing bowl, then transfer the mixture to a pie plate or large flat plate.
- Heat a Swiss Diamond Grill Pan over medium-high heat.
- Dip both sides of each piece of meat into the spice mixture and transfer to the heated pan.
- Grill for 4–5 minutes per side (depending on desired temperature).
- Remove from the grill pan and let sit for a couple of minutes before serving.
