Spicy Miso Edamame

Anyone looking for a mouthwateringly flavorful twist on a simple edamame dish will absolutely love this Japanese-inspired snack. Edamame contains energy, fiber and protein, making it one of the most powerful snacks around. The recipe creators on Season 10 of the Australian cooking show Good Chef Bad Chef take a simple edamame dish to the next level by spicing it up with red miso paste, chili paste, sake and soy sauce. Anyone looking for a mouthwateringly flavorful twist on one of the most popular beans around will absolutely love this Japanese-inspired side dish.

INGREDIENTS

  • 350g (2½ Cups) frozen edamame in shells
  • 3 tbsp red miso paste 
  • 1 tbsp sambal oelek chilli paste 
  • 2 tsp sake
  • 1½ tsp soy sauce
  • 1½ tsp mirin
  • ½ tsp coconut sugar
  • ½ tsp sesame oil

DIRECTIONS

  1. Bring a Swiss Diamond Saucepan of salted water to a boil. Cook frozen edamame for about 45 - 60 seconds.
  2. Wisk together miso, sambal, sake, soy sauce, mirin and coconut sugar until smooth.
  3. Heat sesame oil in a Swiss Diamond Fry Pan or Wok over medium-high heat. Add miso mixture and stir until heated through. Add cooked edamame and toss to coat all.
