Stella's BBQ Pork Chops

If you're looking for a spicy, tomato-based BBQ sauce that goes well with pork, look no further than over the neighbor's fence. I've had this recipe for probably 25 years! The smell from the neighbor's grill caught my father's attention one day and the rest is history. This is too good not to share. Thank you, Stella!

Cook Time: 25 Minutes
Yield: 4 Servings

INGREDIENTS

  • 1, 16 oz can tomato sauce
  • 2 bay leaves
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 Tbsp butter
  • ½ Cup onion, diced
  • 1 Tbsp vinegar
  • 2 Tbsp sugar
  • 1 Tbsp lemon juice
  • 1 Tbsp dry mustard
  • ½ tsp hot sauce (or to taste)
  • ½ Cup water
  • 1 lb. bone-in or boneless pork chops (your choice)

DIRECTIONS 

  1. Place all ingredients in a Swiss Diamond Nonstick Saucepan, stir and bring to a boil.
  2. Once the sauce comes to a boil, reduce heat and simmer 25 minutes, stirring occasionally. 
  3. Grill your choice of bone-in or boneless pork chops. Put the chops directly on an outdoor grill or grill indoors with a Swiss Diamond Grill Pan 3 minutes on each side, then finish by transferring pan to oven until pork chops reach internal temperature of 145°F. 
  4. Generously apply sauce with a basting brush to both sides while cooking.
  5. Ideally, you want to cook pork until it reaches an internal temperature of 145°F. You want to make sure the meat is no longer pink inside, but you also want to be careful not to overcook so you have a moist, juicy chop inside and out.
  6. Enjoy!
