Sweet Potato Chili
We love this unique and delicious chili dish! Use one of our XD or HD Swiss Diamond Pots to ensure even heating and a nonstick experience while cooking! The size of our Soup Pots are perfect for chili.
INGREDIENTS
2 Tbsp extra-virgin olive oil
1 medium onion, chopped
1 red pepper, chopped
3 cloves garlic, minced (3 tsp)
1 Tbsp tomato paste
1 lb Italian sausage
1 Tbsp chili powder
1 tsp dried oregano
½ tsp garlic powder
¼ tsp cayenne pepper
kosher salt
freshly ground black pepper
4 large sweet potatoes, peeled and cubed into 1" pieces
3 Cup low-sodium chicken broth
1, 14.5 oz can diced tomatoes
parsley, freshly chopped, for serving
DIRECTIONS
- In a 5 qt Swiss Diamond Pot, heat oil at medium.
- Add the red pepper and onion and cook until soft, usually about 5 minutes.
- Add garlic and tomato paste and stir until well coated.
- Add sausage breaking it up with a wooden spoon until meat is no longer pink, about 7 minutes.
- Add chili powder, garlic powder, oregano and cayenne pepper.
- Season to taste with salt and pepper.
- Add the sweet potatoes, tomatoes and broth.
- Bring to a boil.
- Reduce heat, cover with lid and let simmer until potatoes are tender, about 15 minutes.
- Optionally garnish with parsley before serving Enjoy!
