Apple Oatmeal Muffins

Sweet apple oatmeal muffins make a delicious grab & go breakfast or snack for busy weekdays (hello, meal prep!).

Thought to be derived from the French moufflet meaning soft bread, or the German muffie meaning a type of cake, the American muffin differs. Muffins are a sweet, quick bread made in individual serving molded in an infinite variety of flavors. In this unique recipe, oatmeal is baked into a muffin to be served hot or cold. This recipe is great for a grab & go breakfast or snack for the entire family or someone who wants to begin meal prep!

INGREDIENTS

cooking spray
1 egg
1 egg white
¾ Cup milk
2/3 Cup unsweetened applesauce
½ tsp vanilla extract
1/3 Cup light brown sugar
2 Cup old-fashioned oats
1½ tsp baking powder
1/4 tsp salt
⅔ Cup fresh apples, peeled & chopped

DIRECTIONS

Preheat the oven to 350°F. Spray a standard muffin tin with cooking spray and set aside.
In a medium bowl, wisk together egg white, egg, milk, applesauce and vanilla extract until combined. Wisk in brown sugar. Switch to a spatula or wooden spoon and stir in oats, baking powder, cinnamon and salt until combined. Gently fold or mix in chopped apples.
Portion evenly into prepared muffin tin and bake for 20 minutes until muffins are beginning to brown and a toothpick inserted into the center comes out clean.
Serve hot or allow to cool before transferring to an airtight container. Store in the refrigerator until ready to serve. Microwave for 30 seconds to heat before serving.
