Apple Oatmeal Muffins

Sweet apple oatmeal muffins make a delicious grab & go breakfast or snack for busy weekdays (hello, meal prep!).

Thought to be derived from the French moufflet meaning soft bread, or the German muffie meaning a type of cake, the American muffin differs. Muffins are a sweet, quick bread made in individual serving molded in an infinite variety of flavors. In this unique recipe, oatmeal is baked into a muffin to be served hot or cold. This recipe is great for a grab & go breakfast or snack for the entire family or someone who wants to begin meal prep!

 
Prep Time: 5 minutes
Cook Time: 20 minutes
Yield: 12 muffins
Difficulty: Easy

INGREDIENTS

  • cooking spray
  • 1 egg
  • 1 egg white
  • ¾ Cup milk
  • 2/3 Cup unsweetened applesauce
  • ½ tsp vanilla extract
  • 1/3 Cup light brown sugar
  • 2 Cup old-fashioned oats
  • 1½ tsp baking powder
  • 1/4 tsp salt
  •  Cup fresh apples, peeled & chopped

DIRECTIONS

  • Preheat the oven to 350°F. Spray a standard muffin tin with cooking spray and set aside.
  • In a medium bowl, wisk together egg white, egg, milk, applesauce and vanilla extract until combined. Wisk in brown sugar. Switch to a spatula or wooden spoon and stir in oats, baking powder, cinnamon and salt until combined. Gently fold or mix in chopped apples.
  • Portion evenly into prepared muffin tin and bake for 20 minutes until muffins are beginning to brown and a toothpick inserted into the center comes out clean.
  • Serve hot or allow to cool before transferring to an airtight container. Store in the refrigerator until ready to serve. Microwave for 30 seconds to heat before serving.
