Apple Oatmeal Muffins
Thought to be derived from the French moufflet meaning soft bread, or the German muffie meaning a type of cake, the American muffin differs. Muffins are a sweet, quick bread made in individual serving molded in an infinite variety of flavors. In this unique recipe, oatmeal is baked into a muffin to be served hot or cold. This recipe is great for a grab & go breakfast or snack for the entire family or someone who wants to begin meal prep!

INGREDIENTS
- cooking spray
- 1 egg
- 1 egg white
- ¾ Cup milk
- 2/3 Cup unsweetened applesauce
- ½ tsp vanilla extract
- 1/3 Cup light brown sugar
- 2 Cup old-fashioned oats
- 1½ tsp baking powder
- 1/4 tsp salt
- ⅔ Cup fresh apples, peeled & chopped
DIRECTIONS
- Preheat the oven to 350°F. Spray a standard muffin tin with cooking spray and set aside.
- In a medium bowl, wisk together egg white, egg, milk, applesauce and vanilla extract until combined. Wisk in brown sugar. Switch to a spatula or wooden spoon and stir in oats, baking powder, cinnamon and salt until combined. Gently fold or mix in chopped apples.
- Portion evenly into prepared muffin tin and bake for 20 minutes until muffins are beginning to brown and a toothpick inserted into the center comes out clean.
- Serve hot or allow to cool before transferring to an airtight container. Store in the refrigerator until ready to serve. Microwave for 30 seconds to heat before serving.
