Butter Roasted Sweet Potatoes
YUM! These sweet potatoes get a crispy texture after you cook them in the oven on one of our Double Burner Griddles. For a healthier option, swap the butter out for coconut oil! You can also make these potatoes more unique by using a little paprika or smokey salt.
INGREDIENTS
2 lbs. sweet potatoes, about 2 large potatoes
4 Tbsp unsalted butter, ghee or coconut oil, melted and cooled
1/2 tsp kosher salt
DIRECTIONS
- Place an oven rack in the middle of the oven and heat to 425°F.
- We suggest peeling the sweet potatoes but this is optional.
- Cut them crosswise into thick, 1" wedges.
- Place the wedges on the XD Nonstick Double Burner Griddle.
- Drizzle with butter or fat of your choice (like coconut oil.)
- Sprinkle with salt and toss to coat.
- Arrange in a flat single layer making sure each wedge has room.
- Bake for 20 minutes.
- Use plastic tongs or spatula to flip the wedges over.
- Bake for another 20 minutes. Enjoy!
