Easy Vegan BBQ Jackfruit Sandwiches

INGREDIENTS

  • 2, 20 oz. cans of young, green jackfruit in water (NOT in syrup)
  • 2 Tbsp brown sugar
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp chili powder
  • ¾ Cup vegan BBQ sauce
  • Extra vegan BBQ sauce for topping
  • 1 Tbsp olive oil

DIRECTIONS

  1. Rinse and thoroughly dry your jackfruit. Place in a mixing bowl and set aside
  2. Combine brown sugar, sweet paprika, garlic powder, salt, pepper, chili powder with jackfruit in bowl and toss to fully season
  3. In a large Swiss Diamond Nonstick Fry Pan over medium heat, add 1 tbsp. olive oil and the seasoned jackfruit. Cook for approximately 3 - 5 minutes to get some color
  4. Add BBQ sauce and begin to thin with a little water to make a sauce. Continue to stir consistently and reduce heat to low-medium. Cover with lid and continue to cook for about 25 minutes
  5. Remove lid and stir occasionally, about every 5 minutes or so
  6. Using two silicone forks, shred the jackfruit as it begins to cook down and the texture has softened
  7. After 25 minutes, turn up heat to medium-high and cook for additional 3 - 5 minutes or until you begin to see more of a color/texture that resembles pulled pork. Remove from heat
  8. Serve with coleslaw and extra vegan BBQ sauce!
