Easy Vegan BBQ Jackfruit Sandwiches

INGREDIENTS
- 2, 20 oz. cans of young, green jackfruit in water (NOT in syrup)
- 2 Tbsp brown sugar
- 1 tsp sweet paprika
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- ½ tsp chili powder
- ¾ Cup vegan BBQ sauce
- Extra vegan BBQ sauce for topping
- 1 Tbsp olive oil
DIRECTIONS
- Rinse and thoroughly dry your jackfruit. Place in a mixing bowl and set aside
- Combine brown sugar, sweet paprika, garlic powder, salt, pepper, chili powder with jackfruit in bowl and toss to fully season
- In a large Swiss Diamond Nonstick Fry Pan over medium heat, add 1 tbsp. olive oil and the seasoned jackfruit. Cook for approximately 3 - 5 minutes to get some color
- Add BBQ sauce and begin to thin with a little water to make a sauce. Continue to stir consistently and reduce heat to low-medium. Cover with lid and continue to cook for about 25 minutes
- Remove lid and stir occasionally, about every 5 minutes or so
- Using two silicone forks, shred the jackfruit as it begins to cook down and the texture has softened
- After 25 minutes, turn up heat to medium-high and cook for additional 3 - 5 minutes or until you begin to see more of a color/texture that resembles pulled pork. Remove from heat
- Serve with coleslaw and extra vegan BBQ sauce!
