Chicken Stir-Fry with Basil
We can't get over how delicious this dish is. Super easy to make, with pleasing favors so that the whole family enjoys it. We use a good amount of basil, but you can change that based on your preferences. Also feel free to spice the dish up with chili or red pepper flakes. We serve this over regular white rice.
INGREDIENTS
1 Tbsp soy sauce
2 Tbsp water
1 Tbsp white sugar
2 lbs skinless, boneless chicken breast halves, cut into small pieces
5 green onions, sliced
3 cloves garlic, chopped
4 Tbsp vegetable oil
2, 6 oz bags fresh baby spinach leaves
1 Cup fresh basil, thinly sliced
DIRECTIONS
- Combine soy sauce, water, and sugar in a bowl.
- Marinate chicken in soy sauce mixture for 30 minutes.
- Heat 1 tablespoon oil in a large skillet or wok over medium heat.
- Cook and stir green onions in oil for 1 minute.
- Add garlic and cook and stir for 1 minute.
- Transfer to a small bowl.
- Add spinach leaves to chicken.
- Cover for 4 minutes stirring occasionally.
- Stir green onion mixture into chicken and spinach, cook for an additonal 1 - 2 minutes.
- Stir in basil and cook until heated, 1 - 2 minutes.
- Serve!
