Cheddar and Apple Soup
Apples and Cheese are a delicious and surprising combination that is perfect for a chilly fall evening. This soup is very easy to make and only requires a large saucepan and separate bowl to mix ingredients in! You can add in different toppings like bacon, extra cheese or even vegetables like broccoli!
INGREDIENTS
½ Cup onion, finely chopped
1 Tbsp butter
3 Cup (2 medium) baking potatoes, chopped and peeled
2 Cup chicken broth + more for thinning
¼ Cup apple cider
1 tsp fresh thyme or ½ tsp dried
½ tsp salt cayenne pepper, dash of, optional
1 medium apple, coarsely chopped
½ Cup milk
2 Tbsp flour (any flour is great including gluten-free)
1 Cup (4 oz) sharp cheddar cheese, shredded
DIRECTIONS
- Warm the butter in an XD Saucepan, then saute the onion until tender.
- Add in your chicken broth.
- Stir in your potatoes, salt, cayenne, thyme and cider.
- Bring to a boil on medium heat.
- Reduce heat and cover with lid.
- Allow to simmer for 15 minutes.
- Add the chopped apple and continue to simmer.
- Use the Swiss Diamond lid for 5 more minutes until potatoes are tender.
- In a small mixing bowl, combine the flour and milk.
- Stir into the soup.
- You will continue to stir until the soup is bubbly.
- If soup is too thick, you can add a little bit of the extra chicken broth to thin it out.
- Slowly add the cheese and wisk until melted.
- Divide soup among bowls and top with apple slices plus your choice of toppings.
