
Jillian's Banana Bread
This banana bread is straightforward, delicious, and sure to be a family favorite. Add mini chocolate chips or chopped cranberries to spruce up this bake for guests.

INGREDIENTS
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ cup unsalted butter, softened
- 1/4 tsp salt
- 1 cup brown sugar
- 2 eggs, beaten
- 2 1/3 cup mashed, overripe bananas (3 - 4 small/medium bananas)
DIRECTIONS
- Preheat oven to 350°F.
- Prepare a loaf pan.
- In a large bowl, combine flour, baking soda and salt.
- In a separate bowl, cream together butter and brown sugar by hand or using an Immersion Blender.
- Stir in eggs and mashed bananas until well blended.
- Stir the banana mixture into the flour mixture just to moisten. If the batter looks too dry, you can add more mashed banana or another egg.
- Pour batter into prepared loaf pan.
- Bake in oven for 60 - 65 minutes until a toothpick inserted into the center of the loaf comes out clean.
- Let the bread cool in the pan for 10 minutes. Turn out onto a wire rack.
