Shaved Apple Salad

Who said a salad just had to be lettuce and vegetables? In this unique dish, a shaved apple salad is made consuming fennel, pepitas, walnuts and kale. The apples give the salad a taste of fall and the light cider mustard vinaigrette dressing says goodbye to summer. This recipe is ideal for a light lunch that will fill you up until dinner.

INGREDIENTS

  • 1 Cup apples, peeled and thinly sliced
  • ½ Cup fennel, thinly sliced plus fronds (frilly green leaves)
  • ¼ Cup chopped kale
  • ¼ Cup walnut pieces
  • 2 Tbsp pepitas
Dressing:
  • 2 Tbsp olive oil
  • 2 tsp apple cider vinegar
  • ½ tsp whole grain mustard
  • ½ tsp honey
  • salt and pepper to taste

DIRECTIONS

  1. Wisk together oil, vinegar, mustard, honey, salt and pepper. Set aside.
  2. Toss together apples, fennel, kale and walnuts.
  3. Fold in dressing. Sprinkle with pepitas and garnish with fennel fronds if desired.
