Shaved Apple Salad
Who said a salad just had to be lettuce and vegetables? In this unique dish, a shaved apple salad is made consuming fennel, pepitas, walnuts and kale. The apples give the salad a taste of fall and the light cider mustard vinaigrette dressing says goodbye to summer. This recipe is ideal for a light lunch that will fill you up until dinner.

INGREDIENTS
- 1 Cup apples, peeled and thinly sliced
- ½ Cup fennel, thinly sliced plus fronds (frilly green leaves)
- ¼ Cup chopped kale
- ¼ Cup walnut pieces
- 2 Tbsp pepitas
Dressing:
- 2 Tbsp olive oil
- 2 tsp apple cider vinegar
- ½ tsp whole grain mustard
- ½ tsp honey
- salt and pepper to taste
DIRECTIONS
- Wisk together oil, vinegar, mustard, honey, salt and pepper. Set aside.
- Toss together apples, fennel, kale and walnuts.
- Fold in dressing. Sprinkle with pepitas and garnish with fennel fronds if desired.
