Chai-Spiced Apple Waffles
These chai-Spiced Apple Waffles are the perfect way to wake up in the morning. Topped with whip cream and fresh apples, these will become a breakfast favorite for everyone in the house. Chai spice is typically made up from a blend of cardamom, cinnamon, and ginger that will have the kitchen smelling wonderful. Chai comes from India and is a very earthy blend but can be found in various shops. Prep Time: 10 minutes

INGREDIENTS
Dry ingredients:
2 Cup flour
2 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
2 Tbsp chai spice
¾ Cup apple diced
Wet ingredients:
1¾ Cup milk
1/4 Cup coconut oil
2 eggs
1 tsp vanilla extract
DIRECTIONS
- To make the batter:
- Combine the dry ingredients in a large bowl.
- Add the diced apples cut with a Swiss Diamond 3.5" pairing knife in with the dry ingredients and toss to coat.
- Combine the wet ingredients in a small bowl and mix well.
- Add wet ingredients to the dry mix and mix just until there are no large clumps. Do NOT overmix. Some small lumps are normal.
To cook the waffles:
- Make sure your waffle mixture is all ready to go.
- You will use about ½ cup waffle batter per waffle section.
- Lightly brush both sides of the inside of the pan with canola oil.
- Use a pastry brush or one of those canisters that sprays oil. Do not use an aerosol cooking spray!
- Begin heating one side of the waffle iron over medium heat for about 3 minutes.
- Flip the iron to being heating the other side.
- Open the iron and pour about ½ cup of batter into each waffle well.
- Close the iron and set a timer for about 3 minutes.
- When the timer runs out, carefully flip the waffle and cook for an additional 3 minutes.
