Jillian's Banana Bread

This banana bread is straightforward, delicious, and sure to be a family favorite. Add mini chocolate chips or chopped cranberries to spruce up this bake for guests.

INGREDIENTS

  • 2 cups all-purpose flour 
  • 1 tsp baking soda
  • ½ cup unsalted butter, softened 
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cup mashed, overripe bananas (3 - 4 small/medium bananas) 

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Prepare a loaf pan.
  3. In a large bowl, combine flour, baking soda and salt.
  4. In a separate bowl, cream together butter and brown sugar by hand or using an Immersion Blender.
  5. Stir in eggs and mashed bananas until well blended.
  6. Stir the banana mixture into the flour mixture just to moisten. If the batter looks too dry, you can add more mashed banana or another egg.
  7. Pour batter into prepared loaf pan.
  8. Bake in oven for 60 - 65 minutes until a toothpick inserted into the center of the loaf comes out clean. 
  9. Let the bread cool in the pan for 10 minutes. Turn out onto a wire rack.
