Jillian's Banana Bread

Picture yourself cozied up on the couch on a chilly winter morning. The weatherman is excitedly discussing the possibility of 7" more of snow tonight and your dog is softly snoring next to you. The air suddenly fills with the delicious scent of baking banana bread, better than any candle you can buy. That’s the scene we imagined after making this fan-submitted recipe.

This Banana bread is straightforward, delicious and sure to be a family favorite. Add mini chocolate chips or chopped cranberries to spruce up this bake for guests.

INGREDIENTS

  • 2 Cup all-purpose flour
  • 1 tsp baking soda
  • ½ Cup unsalted butter, softened
  • 1/4 tsp salt
  • 1 Cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 Cup mashed, overripe bananas (3 - 4 small/medium bananas)

DIRECTIONS

  1. Preheat oven to 350°F. Prepare a loaf pan. In a large bowl, combine flour, baking soda and salt.
  2. In a separate bowl, cream together butter and brown sugar by hand or using a Jêt Mix Immersion Blender. Stir in eggs and mashed bananas until well blended. 
  3. Stir the banana mixture into the flour mixture just to moisten. If the batter looks too dry, you can add more mashed banana or another egg.
  4. Pour batter into prepared loaf pan.
  5. Bake in oven for 60 - 65 minutes until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes. Turn out onto a wire rack.
